Keeping Thanksgiving leftovers safe after the holiday

As the aroma of roasted turkey and pumpkin pie fades and Thanksgiving celebrations wrapped up yesterday, many families are now facing the question: What to do with all the leftovers?

Some families, however, will continue celebrating throughout the weekend, making leftover safety even more important.

While leftovers can provide easy meals for days, improper storage and handling can increase the risk of foodborne illness.

Food safety experts remind everyone that leftover turkey, stuffing, gravy, and other holiday dishes need careful attention to prevent bacteria growth.

The U.S. Department of Agriculture (USDA) recommends the following tips:

  1. Refrigerate Quickly
    Perishable foods should be refrigerated within two hours of cooking—or within one hour if the room temperature is above 90°F. Bacteria multiply rapidly at room temperature, increasing the risk of food poisoning.
  2. Use Shallow Containers
    Store leftovers in shallow containers so food cools evenly and quickly in the refrigerator. Large amounts of food in deep containers may stay warm longer, creating an unsafe environment for bacteria.
  3. Keep Cold Foods Cold and Hot Foods Hot
    Maintain refrigerator temperatures at or below 40°F and freezer temperatures at 0°F or below. When reheating, ensure leftovers reach an internal temperature of 165°F.
  4. Know the Shelf Life
    Turkey, stuffing, and gravy can safely be stored in the refrigerator for 3–4 days. Side dishes like mashed potatoes, vegetables, and casseroles also last 3–4 days. Leftovers that won’t be eaten within this timeframe should be frozen for longer storage.
  5. Label and Date
    Label containers with the date they were cooked to track freshness and avoid accidentally eating food that has been sitting too long.
  6. When in Doubt, Throw It Out
    If you’re unsure whether a leftover is still safe, it’s best to discard it.
